			<content:encoded><![CDATA[<p>First, I am not a chef.  Second, I&#8217;m not even a good cook.  I do like to cook, but enjoyment of cooking does not a chef make &#8211; or something like that.  I manage to hobble something together that&#8217;s edible on occasion.  As you will see with the following recipe, I throw together completely random ingredients and on occasion it turns out damn good.  This is one of those recipes, at least for me.  I&#8217;m a simple person, some might say simpleton.  Oh, and I never measure stuff.</p>
<p>Boneless chicken breasts on both sides add paprika, cayenne, basil, <a href="http://www.zatarains.com/Products/Spices-and-Extracts/Creole-Seasoning.aspx" target="_blank">Zatarans Creole seasoning</a>, thyme, black pepper, <a href="http://www.mrsdash.com/products/seasoning-italian-medley.aspx" target="_blank">Mrs. Dash Italian Medley</a>.  Put in a glass cooking thingy, stuff some thawed chopped spinach around it.  Add a light amount (don&#8217;t drown it) of <a href="https://www.wegmans.com/webapp/wcs/stores/servlet/ProductDisplay?langId=-1&amp;storeId=10052&amp;productId=358946&amp;catalogId=10002&amp;krypto=QJrbAudPd0vzXUGByeatog%3D%3D&amp;ddkey=http:ProductDisplay" target="_blank">Ken&#8217;s Northern Italian with Basil &amp; Romano</a> around the chicken and on the spinach. Cover all of it with plenty of shredded Parmesan cheese, sqeeze on some fresh lemon, slice some bits and do like the photo.  Bake at 350 for 40 minutes.  Indulge.  [ don't forget you can always click on images to embiggen them ]</p>
